Christmas Market Handbrot
ingredients:
2 tsp sugar
½ cup warm water (125ml)
1 tbsp olive oil
2 tsp dry active yeast
250g all purpose flour* (2 cups + 1 tbsp)
1 tsp salt
3/4 block of smoked tofu (150g)
1 red onion
oil for the pan
4-5 handfuls of vegan pizza cheese or make some of my vegan cheese sauce**
*you can also sub spelt flour, but then make sure to add 1-2 tbsp more water
** Melt 1 tbsp of vegan butter on medium high heat. Add 1 tbsp of cornstarch and mix that in. Pour in ¾ cup of non dairy milk (180ml). Bring it up to a quick boil, then turn the heat to medium, stirring frequently until it thickens up. Then add 1-2 handfuls of vegan pizza cheese, a pinch of turmeric, a generous pinch of salt (or to taste) and 1 tsp of white wine vinegar. Continue mixing until you have reached your desired consistency. This recipe can be helpful if you don’t have that much vegan cheese at home, or the vegan cheese you have is not that great or just don’t wanna use up all your vegan cheese at once.
