Vegan Mac and Cheese

1 tbsp vegan butter
1 ½ tsp flour
¾ cup non dairy milk - ¼ cup at a time (180ml - 60 ml at a time)
2 ½ tbsp nutritional yeast
1 tbsp fresh lemon juice
salt, pepper to taste
1 tsp miso paste, optional (for instance mugi miso)
1-2 handfuls of grated vegan cheese - one that melts!
