Lazy Spinach Falafel Salad

→ 2-3 servings

1 can chickpeas, rinsed and drained (240g)

1 red onion, quartered

1 clove of garlic

1 tsp tahini

juice of ½ lemon ⅓ cup oats (30g)

1 - 2 handfuls of spinach

salt, pepper to taste

1 tbsp soy sauce

1 tbsp oil for frying

hummus dressing ( 1 heaping tbsp hummus + 1 tbsp lemon juice)

a handful of sunflower seeds, chopped tomatoes, cucumber and avocado
