15 min Rice Noodle Salad: (1-2 portions)

- Rice noodles (ca. 150g)

- 1 bell pepper

- 1 carrot

- 1 leek

- 1/2 avocado

- 1/4 cup rice vinegar

- 2 Tbsp agave

- a few splashes of soy sauce

- fresh lime juice (you can easily double the dressing)
