Chocolate & Orange Ice Cream Cake

Cake Part:

1 cup oat flour (90g)

2 tbsp corn starch

2 tsp baking powder

3 tbsp cocoa powder

⅓ cup raw, date or coconut sugar (80g)

3 tbsp melted coconut oil

1 flax egg = 1 tbsp flax seeds + 2 tbsp water

1 tsp vanilla

juice of ½ lemon

1 cup non dairy milk (250ml)

Cream Part:

→ for one 8 or 9 inch cake pan

1 cup cashews, soaked in water overnight (125g)

¼ tsp salt

juice of 1 lemon

½ cup canned coconut milk (125ml)

½ cup plain soy yogurt (125ml)

½ tsp orange, clementine - zest

2 tbsp corn starch

¼ cup + 1 tbsp raw sugar (or date, coconut sugar) (62g + 1 tbsp)

Vegan Chocolate Sauce:

→ combine all the ingredients until smooth :)

→ adjust flavour if necessary

1 tbsp cocoa powder, unsweetened

1 tbsp agave or maple syrup

2 tsp melted coconut oil

a pinch salt
