Mini Carrot Cake (low fat)

Ingredients:

- 2 Cups flour (spelt, all purpose, whole wheat)

- 1 1/2 tsp baking soda

- 1/2 teaspoon cinnamon

- 2/3 Cup raw sugar

- 1 Cup almond milk (or any other plant milk you like)

- 3/4 Cup unsweetened apple sauce

- 2 Tbsp apple cider vinegar (or white vinegar)

- 1 Cup shredded carrots

- coconut oil for greasing (optional)
