One Pot Lemon + Mushroom Pasta
Ingredients:
One Pot Lemon + Mushroom Pasta:
For the caramelized onions:
- 2-3 onions, white or yellow
- 1 Tbsp olive oil
- 1 Tbsp raw sugar
- season to taste with salt, pepper
For the pasta:
- a handful of fresh sage (optional, but recommended)
- 1 Tbsp olive oil 1 cup mushrooms (~100g)
- 2 1/2 cups veggie stock (625ml), more if needed
- 220g pasta of your choice (7,7 oz)
- a few handfuls of spinach, fresh or frozen
- season to taste with salt and pepper
- juice and zest of 1 lemon
For the vegan parmesan:
- 2/3 cup cashews, without salt (100g)
- 2 1/2 Tbsp nutritional yeast
- 1/2 tsp salt
- 1/2 tsp paprika, smoked
- 1/4 tsp garlic powder
