Vegan Pizza Rolls
Ingredients:
350g spelt flour (3 cups) + more for the surface
100g whole wheat flour (½ cup + 3 tbsp)
1 ½ tsp salt
1 tsp dried Italian herbs
1 pack of dry active yeast (7g)
1 tbsp raw sugar
¼ cup water (60ml)
½ cup non dairy milk (125ml)
½ cup aquafaba (chickpea water) (125ml)
½ cup marinara sauce (125ml)
1 red onion, cut into rings
a handful of parsley, chopped
2-3 tbsp nutritional yeast
vegan cheese (optional)
→ yields 12-14 rolls
→ serve with more marinara, hummus, raw veggies, a quick salad etc
*Warm places to let the dough rise would be next to a window with the sunshine coming through, close to the heating, in the oven with only the lights turned on ... *When taking the dough out of the fridge the next day, give it a few more minutes of kneading to warm it up.
