Lentil Avocado Salad + Pesto ‘Pizza’ Bagels

salad:

3 handfuls of fresh baby spinach

½ can brown lentils (120g)

½ can chickpeas (120g)

1 avocado

1 carrot, shredded

dressing:

1 tsp mustard

1 tsp agave

1 tbsp white wine vinegar

1 tsp olive oil

2 tbsp water

salt to taste

bagel:

1 bagel lol

vegan cream cheese or mashed avocado or : 2 tbsp unsweetened soy yogurt, 1 tsp lime or lemon juice, 1 tsp white wine vinegar, salt, pepper, paprika to taste

vegan pesto

a vegan marinara sauce you like! I can recommend the classic one from DM not spon obviously

extra spinach or fresh basil

→ serves 1 or 2 as a snack
