Mini Vegan Carrot Cakes
→ makes 12 muffins
- 2 cups spelt flour (240g)
- 2 tsp baking powder
- ¼ tsp cinnamon
- ¼ tsp salt
- ½ tsp vanilla
- ¼ cup melted vegan butter or coconut oil + 1 tbsp more for greasing the muffin tin (60ml + 1 tbsp)
- ½ cup raw sugar + 2 tbsp (125g)
- 2 tsp apple cider vinegar OR 1 tbsp lemon juice
- ¾ cup non dairy milk (180ml)
- ⅓ cup unsweetened applesauce (80ml)
- 1 cup shredded carrots (110g)
- ¼ cup raisins, optional (25g)
